Quality cool climate wine from the Orange wine growing region in New South Wales, Australia

Cancerian Dinner Party blog

Stephen Doyle

There is always red wine left over after the mains so this is why I follow the French system and serve cheese at this point. Just make sure it is a harder cheese that will suit a red.

If you have a soft cheese then it is critical you serve it with a stronger bread which may help it taste better with a red.

Comte is our favourite cheese for reds; in fact it is THE favourite cheese choice of lots of our friends.

For the special occasion of Christmas in July try and get the 18 months aged Compte - it's nuttier and so moorish (a little like Steve).

Substitute Australian Maffra cheddar if you cannot access Comte. Maffra is a very fine cheddar.

For the Biscuits:

Buy the cheese and the biscuits; make sure both are fresh.
