News from the vines

Vintage is done, the grapes are crushed and resting now through a winter that will produce some great releases in the years to come. It was a good growing season if a little dry at the end, but this will bring ripeness and character to both our reds and white varieties.

For now, we can take in the change of season and perhaps our turn for a little rain and watch as vines are shedding their shimmering burnished leaves and exposing their skeletons after the wind and the late cold seasonal break of a week ago. I love this time of the year and my thoughts turn to dinners with friends and the food that will showcase this year’s offerings.

A Morsel To Muse Over

My word for the month is “morsel”. It’s a bite, a nibble, a soupcon and often provides that gentle gastronomic transition from one course to another; from one wine to another character or style.

Mini cheese course bridging main and desert

You have finished main but are still lingering on the red. Too full for a trio of cheeses but maybe a morsel or two to delay launching into dessert. So, if you are enjoying our Pinot or Maurice in this situation, here's a cheese canape you can have prepared that either will go with.

2010 Bloodwood Chirac

  • 60% Chardonnay & 40% Pinot Noir, a sparkling performer-more French than the French

  • Would you believe we will be returning to the same place for the VIVID evening where Stephen and I launched our very first thrilling Chirac in 1996.

  • Morsel

I love it icy cold with a hot crisp pastry or French Fries. Even Parmesan biscuits work well.

2019 Bloodwood Pinot Noir

  • This Pinot has already graced the stage at the Opera House passionately making its mark at Bennelong Restaurant. It is from a warm dry year and is darkly brooding and intense.

  • Morsel

Pork, duck, steak or lamb fillets or a sliver of divine Comte

2019 Bloodwood Maurice

  • (Our master blend based on Cabernet Sauvignon, with a dash of Cabernet Franc, Merlot and Malbec)

Maurice has a past with the Opera House. They were much loved at Bennelong for the entirety of Guillaume’s residency.

A complex Cabernet family blend from a warm dry year. An outstanding wine with perfectly ripened fruit and gorgeous finesse on the palate. Ripe dark fruit flavours with an elegant finish, the best characteristics of Australian fruitiness and French restraint.

  • Morsel

A sliver of Comte also is complete with Maurice. Beaufort is even better.

Tasty morsels for the Dance of Dreams Offer

The morsel bridging course to linger and savour the rest of the red wine after the main. It has a small amount of cheese and even some vegetable before the appetite/ show stopping sweets.
